Ingredients

Serving Sizes

Smoked Sausage and Peppers

  • 3-5 lb Beef chuck well marbled and about 3 inches thick
  • Salt, Pepper, and Granulated Garlic or your favorite rub.
  • 1/2 to 1 sliced onion
  • 2 TBS Worcestershire sauce
  • 1 TBS Prepared Horseradish sauce
  • 1 teaspoon Better Than Bouillon beef base
  • 1/8 cup water

Equipment

  • Z Grills Multitasker 7052B
  • Z Grills cherry pellets
  • Tin, foil, and a rack

Instructions

Simple prep

Step 1: up to 1 hour before the cook, apply a generous amount of your rub. In my case, S&P&G… Allow to sit at room temperature

Recipe

Step 1: Fire up your Z GRILLS and set that temperature to 250°F.. I’m using cherry pellets.
Step 2: Once your temperature is reached, add in your Chuck Roast middle shelf(grate)
Step 3: At that 3-hour mark, check it for even cooking and give it a spritz. You should be around 140-150 internal. Let it run for another 1-2 Hours until you hit the stall. In my case, it was 2 hours.
Step 4: Once that stall is reached, remove it along with the tin.
Step 5: to the tin add 1/2 to 1 onion(sliced), 2 TBS Worcestershire sauce, 2 TBS prepared horseradish sauce, 1 teaspoon Better Than Bouillon beef base, and 1/8th cup water. Add one rack and your beef chuck on the rack and seal tightly with foil…
Step 6: Once you reach approximately 204°F internal, it is time to remove. Just double check you are tooth pick tender
