Grilled Vegetables

  • 2 T vegetable oil
  • 2 cloves garlic (finely chopped)
  • 3 sweet potatoes (cut into 1-inch slices)
  • 3 ears of corn (cut into 2-inch sections)
  • 1 eggplant (cut into 1/2-inch slices)
  • 12 green onions (trimmed)
  1. Mix oil and garlic in a large bowl.
  2. Add vegetables and toss.
  3. Place vegetables on broiler pan or grill.
  4. Cook 10 minutes, turning twice, until vegetables are tender.
  5. Place vegetables on a platter.
  6. Serve.
